Egg and Avocado Toast

Everyone loves avocado toast, and if you add an egg to it you have a full meal. Sometimes I use balsamic vinegar to flavour the avocado instead of the lemon juice.

Ingredients
  

  • 1 teaspoon butter
  • 1 egg beaten
  • 1/4 avocado
  • 1 slice sprouted wheat bread toasted
  • Splash of lemon juice to taste

  • Pan
  • Bowl

Method
 

  1. In small non-stick skillet, melt butter over medium heat.
  2. Add egg; season and scramble.
  3. In small bowl, mash avocado; season and spread on toast.
  4. Top with egg; sprinkle with pepper and lemon juice.
